Grilled Chicken With Peach Salsa
Ingredients
- 2 tsp canola oil
- 4 6-oz. (170g) boneless, skinless chicken breasts
- 1/2 tsp kosher salt, divided
- 1/2 tsp black pepper, divided
- 1 1/3 cups (206g) peaches, chopped
- 1/4 cup (25g) green onions, thinly sliced
- 1 medium jalapeño pepper, seeded and minced
- 1 tsp lime zest
- 2 tsp fresh lime juice
- 2 tbsp fresh cilantro, chopped
Directions
Preheat an outdoor grill to medium-high heat and lightly oil the grates.
Place the chicken between two sheets of plastic wrap and pound to an even thickness using a meat mallet or heavy skillet. Season with 1/4 tsp salt and 1/4 tsp black pepper.
Grill the chicken for 5–7 minutes per side, or until grill marks form and the internal temperature reaches 165°F (74°C). Transfer to a plate and let rest for 5 minutes.
Meanwhile, in a medium bowl, combine the peaches, green onions, jalapeño, lime juice, lime zest, cilantro, remaining 1/4 tsp salt, and 1/4 tsp black pepper.
Spoon the peach salsa over the grilled chicken and serve.
